Ingredients  

  • 3 pounds Sweet Potatoes peeled and cut into cubes
  • 1/2 cup Brown Sugar
  • 1/2 tsp Vanilla Extract
  • 3/4 cup Pecans chopped
  • 1/2 tsp Cinnamon Powder
  • Kosher Salt
  • Black Pepper, freshly cracked
  • 2 cups Miniature Marshmallows

Instructions 

  • Peel the sweet potatoes and cut them into pieces. Place sweet potatoes in a pot of boiling water. Cook for 15 minutes or until a fork can be pierced easily. Drain well.

  • In a large bowl (or in the pot you cooked the potatoes in), mash the sweet potatoes with the brown sugar, butter, cinnamon, vanilla, salt, and pepper. Finally, add half of the chopped pecans and mix well.
