Crispy and tender roasted asparagus and mushrooms, all done in the air fryer in less than 15 minutes!
The juicy mushrooms and asparagus are the perfect complement to steak, chicken, pork, fish, or any main dish you desire. But we don’t stop there. You can also chop the asparagus and mix it with pasta and sauce for a delicious plant-based meal. Or why not serve it with rice or quinoa? Let this dish be just the beginning of everything you want.
Ingredients
All the ingredients needed for roasted asparagus and mushrooms are readily available in your kitchen.
- Fresh asparagus: The star of the dish, asparagus is trimmed to remove the woody ends and then halved crosswise to ensure even cooking and a tender bite. Asparagus brings a slightly sweet, grassy flavor that’s enhanced when roasted.
- Fresh mushrooms: For this roasted asparagus and mushrooms recipe, where the mushrooms are subjected to high heat and need to maintain their structure and offer a “meaty” texture. White button mushrooms and cremini mushrooms are excellent choices due to their firmer texture and deeper flavor compared to other varieties.
- Olive oil
- Kosher salt
- Fresh thyme leaves
- Unsalted butter melted
- Aged balsamic vinegar for drizzling
- Black pepper, freshly cracked
Equipment
I made the roasted asparagus and mushrooms using my favorite air fryer: Typhur Dome air fryer. With the Typhur Dome air fryer, there’s no need to wait for it to preheat, saving you time. Thanks to its advanced airflow and circulation, it creates a wonderfully crispy exterior on the vegetables, mimicking the roasting effect of an oven but often yielding even better results.
So, if you are tired of oven roasted asparagus and mushrooms, cooking it in the air fryer is the best alternative way.
