For the Dough

  • 1 tbsp Maple Syrup
  • 2 1/4 tsp Dry Yeast
  • 1 1/4 cup Warm Water
  • 19 oz Bread Flour
  • 2 tsp Sea Salt

For the Poaching Water

  • 1 1/2 tbsp Maple Syrup
  • 2 tsp Baking Soda
  • 1/2 tbsp Kosher Salt

For the Toppings

  • 1 Egg White
  • 1 tbsp Water
  • Bagel Seasoning

Instructions 

  • Prepare the Dough: In a small bowl, combine maple syrup, yeast and water and let rise for 5 minutes or until bubbly. Place the flour, salt, and yeast mixture into the bowl of a mixer fitted with the dough hook. Mix on medium-low speed until dough forms around hook, 5 to 7 minutes. If the dough is very dry after 3 minutes, add 1 tablespoon water.

  • Fermented Dough: Transfer the dough to a clean work surface and knead for 2 to 3 minutes until smooth and barely sticky, then shape into a ball and place in a large bowl. Add 3 bagels (or as many as will comfortably fit in the pot) to the pot, reducing the heat if the water starts to overflow. Cook 1 minute on each side. Transfer bagel back to baking sheet and flip so smooth side up. Repeat with remaining bagels.
