For the Dough
- 1 tbsp Maple Syrup
- 2 1/4 tsp Dry Yeast
- 1 1/4 cup Warm Water
- 19 oz Bread Flour
- 2 tsp Sea Salt
For the Poaching Water
- 1 1/2 tbsp Maple Syrup
- 2 tsp Baking Soda
- 1/2 tbsp Kosher Salt

- 1 tbsp Water

- Prepare the Dough: In a small bowl, combine maple syrup, yeast and water and let rise for 5 minutes or until bubbly. Place the flour, salt, and yeast mixture into the bowl of a mixer fitted with the dough hook. Mix on medium-low speed until dough forms around hook, 5 to 7 minutes. - Fermented Dough: Transfer the dough to a clean work surface and knead for 2 to 3 minutes until smooth and barely sticky, then shape into a ball and place in a large bowl.
