Garlic Lemon Butter

  • 1/2 cup Unsalted Butter melted
  • 3 Garlic Clove minced
  • 1 tsp Fresh Rosemary Leaves finely chopped
  • 1 tbsp Fresh Parsley, finely chopped
  • 1 tsp Kosher Salt
  • 1/3 tsp Crushed Black Pepper
  • 1 tbsp Lemon Juice

For the Chicken

  • 3 pounds Chicken
  • 3 sprigs Fresh Thyme or Rosemary
  • 1 Lemon cut into 4

Instructions 

  • Mix together Butter ingredients. Finally add the lemon juice.
    1/2 cup Unsalted Butter, 3 Garlic Clove, 1 tsp Fresh Rosemary Leaves, 1 tbsp Fresh Parsley, finely chopped, 1 tsp Kosher Salt, 1/3 tsp Crushed Black Pepper, 1 tbsp Lemon Juice
  • Place chicken in a roasting pan. Use a dessert spoon to loosen skin from chicken. Do the top and the drumsticks – not the underside.
    3 pounds Chicken
  • Place the chicken breast-side up and drizzle the butter under the skin, using most of the garlic/herb puree but saving a little butter for the skin. Drizzle the remaining butter over the skin and spread evenly with a brush or spoon.
  • Stuff used lemon wedges and rosemary inside chicken. Tie the drumstick ends with string and tuck the wing tips under the chicken. Line a baking sheet with baking paper and place the chicken on the roasting pan.
