Preparing Sweet Potatos: Wash the sweet potatoes and cut them into wedges with a knife.

Make the Gochujang Aioli: Add all the seasonings to a bowl and mix well. Set aside.
1/2 cup Mayonnaise, 1 tbsp Gochujang, 1 tbsp Rice Vinegar, 1 tsp White Granulated Sugar
Seasoning the Sweet Potatoes: Place sweet potato wedges in a large bowl. Drizzle with oil, salt, garlic powder, smoked paprika, salt, and pepper. Gently toss to coat.
Add the Sweet Potatoes: Carefully add the sweet potato wedges to the basket in a single layer. Place the basket back into the air fryer.
Cook the Sweet Potatoes: Set the air fryer to Air Fry mode at 375℉/190°C with cooking time 12 minutes. Cook the sweet potatoes.
Remove and Season: Once the wedges have been cooked to your liking, carefully transfer them to a large mixing bowl. Toss with kosher salt and pepper, then sprinkle with fresh minced parsley or cilantro.
Fresh Parsley, finely chopped
Serve and Enjoy: Serve with gochujang aioli or ketchup.
