In a medium bowl, stir together the hot sauce, melted butter, honey, garlic powder, and paprika. Season to taste.

Clean the cauliflower and cut it into small florets.
In a large bowl, whisk together flour, cornstarch, garlic powder, onion powder, paprika, and salt. Add water and whisk until smooth.

Add cauliflower and stir to combine. Remove cauliflower from batter, allowing excess batter to drip back into bowl.
Arrange the cauliflower in a single layer in the air fryer basket, leaving a little space around each cauliflower. Do not crowd the basket. Work in batches as needed. Place the basket back into the air fryer.
Set the air fryer to Roast mode at 400℉/205°C with cooking time 14 minutes. Cook the cauliflower.
Using tongs carefully remove the cauliflower from the air fryer to a plate or serving tray.
Toss the cauliflower with Buffalo sauce in a clean bowl before serving.
