Using a small knife, cut around the thinner part of the bone (near the cartilage/joint). Then use the knife to scrape the meat down to separate it from the bone and push it to the bottom. As you cut, cut away any excess cartilage strands that may pop out.
8 Chicken Drumsticks
Near the bottom of the thick part, make a cut about three-quarters of the way through one side of the meat. Flip the meat inside out so the skin is on the inside and the meat is on the outside, forming a “lollipop” shape.
Add chicken lollipops to a clean bowl, add salt, black pepper, garlic powder and vegetable oil to the chicken lollipops. In a medium bowl with 1/2 cup cornstarch, roll each lollipop in the starch to coat.
Carefully place the chicken lollipops into the basket in a single layer. Spray the lollipops with cooking oil. Insert the basket back into the air fryer.
Set the air fryer to Air Fry mode at 400℉/205°C with cooking time 12 minutes. Cook the chicken lollipops.
Using a pair of tongs, carefully remove the chicken lollipops from the air fryer to a plate or serving tray.
Dip or brush the fried chicken lollipops with barbecue sauce or your favorite sauce and enjoy.
